Crottino di capra
The cheese has a small cylindrical shape: 3-4 cm in diameter, average weight about 80 g. and is consumed after a 20-40 day seasoning.
On the surface of the goat’s crottino there is a slight yellowish pinkish patina with some streaks of white-gray mold, the paste is homogeneous in cut, straw-yellow in color, the central part is proteolysed due to the rapid centripetal maturation due to the small size of the cheese, with particularly savory and spicy taste typical of goat’s milk.
