HOT CAKE WITH TALEGGIO AND LEEK
Ingredients for 4 people:
- for the crust:
200 gr. of flour
100 gr. of butter or margarine
1 egg
salt q.b.
- for the filling:
3 eggs
3 glasses of milk
150 gr. of taleggio cheese
100 gr. di leeks
salt, pepper, nutmeg
50 gr. of butter
For the crust: Mix the flour, butter, egg and salt to a compact and soft dough. Roll the dough into a circle; place in a buttered pieplate.
For the filling: Wash the leeks well and slice fine. Boil without cover at low heat with butter for about 15 minutes. Mix the eggs with the milk, add diced taleggio cheese, salt, pepper and nutmeg. Add the cooked leeks, stir, and pour into mold. Cook at medium height in oven at 200°C for 5/30 minutes. Serve on a round plate, perhaps with slices of truffles.
