MULTICOLOR SALAD WITH TALEGGIO
Ingredients for 4 people:
100 gr. of carrots
100 gr. of red peppers
100 gr. of cucumbers
100 gr. of celeries
soft mustard
oil, lemon, salt and pepper
Cut all the vegetables and the cheese as finely as possible.
Immerse the vegetables in little water and some ice, barely covering them (the ice
has the purpose of maintaining the vegetables crunchy and fresh).
Before serving them, drip and add the taleggio cheese. Garnish with a sauce made
with 2/3 od oil, 1/3 od lemon, a pinch of salt and one of pepper, a spoonful of soft
mustard.
Serve immediately.
