    TALEGGIO DOP

    Taleggio cheese has ancient origins, possibly going back to the X century. In that period it was produced by the valley peasants in order to use the surplus of milk. It was subsequently seasoned in caverns or valley creeks.With the passing of years the milk production grew steadily and the Taleggio cheesemaking passed from the families to medium-small companies located in the plain.
    After this second phase, there was a further evolution with the appearance of medium-big companies where the old times production technique was coupled with more up-to-date scientific methods.
    Today the Taleggio production is concentrated in the Padana plain and centered in the Lombardia region. The consume of this cheese type, originally restricted to the production areas, thanks to the expanding distribution sistem has grown to cover all Italy and some countries abroad.
    Taleggio is a "Denominazione d'Origine Protetta" (DOP) cheese; this means that it can be produced only in certain areas, as stated in national and European laws, with milk coming from the same regions. Taleggio must be produced and seasoned only in the following Lombardia regios: Bergamo, Brescia, Como, Cremona, Lecco , Lodi, Milano, Pavia; in the Piemonte region of Novara; and in the Veneto region of Treviso.

    A symbol to safeguard Taleggio

    The most renown Taleggio makers are united in a Consorzio in order to safeguard the production of the original cheese. The Consorzio has been recognised and has been assigned the tasl of controlling the production and commerce with a decree of the Agriculture and Forest Ministry and the Ministry of Industry on the 13th.01.1981 (C.U. n. 89 of the 31th.3.1981).

    In order to enable the consumer to clearly recognise the Taleggio cheese, this product has been marked douring its production diractly on the cheese with this symbol:

    Duties and objectives of the Consorzio

    Some of the duties of the Consorzio are:
    - Safeguarding the production and the commerce by marking each cheese with its registered symbol and featuring the CTT symbol on the package.
    - Spreading the Taleggio use with a number of promotional features that will facilitate its commerce and increase the demand from the consumers.
    - Actively guarantee for the customer sake constant improvements of cheesemaking methodologies and therefore a better quality of the product.
