Ingredients for 4 people:
- per il salmone:
500 gr. of fresh salmon
flower, salt
- for the butter:
100 gr. of butter
a lemon's juice
10 gr. of salmon's eggs
salt and pepper
- per i raviolini:
200 gr. of homemade dough
140 gr. of taleggio cheese
20 mint leaves

Make the raviolini from the fresh dough, the cheese and the chopped mint; boil them in salted water. Whip thoroughly the butter and add the salmon egg, salt pepper and lemon juice; form with the resulting mass a cilindrical shape and lay it in the refrigerator until set to use. Cook the salmon fish with some butter after slightly flowering it; drip the raviolini and correct the taste with a little block of butter. Serve the salmon with a slice of butter and the raviolini on the side. Garnish with shrimps.
